Red Duck Curry

Ingredients

  1. 40 dried, long red chiles, rehydrated in hot water until soft
  2. 3 tablespoons chopped red onion
  3. 3 tablespoons chopped garlic
  4. 1 tablespoon chopped galangal
  5. 2 tablespoons chopped lemongrass
  6. 2 tablespoons chopped kaffir lime rind
  7. 1 coriander root
  8. 1/2 tablespoon ground cumin powder
  9. 1 tablespoon ground coriander powder
  10. 1 tablespoon shrimp paste
  11. 3 fresh long red chiles
  12. 1 cup cooking oil
  13. Red Duck Curry:
  14. 2 tablespoons cooking oil
  15. 4 tablespoons red curry paste
  16. 1 1/2 cups coconut milk
  17. 10 ounces boneless roasted duck, cut into bite-sized pieces
  18. 4 ounces apple eggplants
  19. 4 ounces pea eggplants
  20. 10 sweet Kris tomatoes, roughly chopped
  21. 4 pineapples, cut into chunks
  22. 4 lychees, fresh or canned
  23. 2 tablespoons fish sauce
  24. 1 tablespoon sugar
  25. 1 long red chili
  26. 1 1/2 ounces sweet basil leaves
  27. 6 kaffir lime leaves
  28. Steamed jasmine rice, for serving, optional

Instructions

  1. To prepare the Red Curry Paste:
  2. In a blender, combine all of the ingredients. Add a splash of water to help it blend easily. Blend until well mixed to a fine texture. Cook the paste in the oil until the paste is well cooked, about 7 to 10 minutes.
  3. Preparation for Red Duck Curry:
  4. Into a large saucepan over medium heat, add cooking oil and red curry paste and stir well. Add half of the coconut milk and gently stir. Add the duck, apple eggplant, pea eggplant, tomatoes, pineapple, and lychee. Bring to a boil and cook uncovered until vegetables are tender. Add the fish sauce and sugar to desired sweetness. Remove from heat and add the chili, basil, kaffir lime leaves and serve.

making it now.. fish sauce is out.. for me anyway, as I’m health as well as flavor conscious.  The fish is heavily salted then left to ferment for 9 months to a year.  (Salt cautions here ). During this lengthy fermentation Halophilic lactic acid bacteria are formed. Scientists have isolated from fermented fish sauce mashes and noted that..  These bacteria form 3 toxic compounds. a). 1-Propanol, similar to ethanol in its effects on the human body, but 2-4 times more potent. These effects are alcoholic intoxication and acidosis;  b) 2-methyl propanol.  This chemical is inflammable and harmful if swallowed; c) Benzaldehyde, causing gastrointestinal irritation with nausea, vomiting and diarrhea, central nervous system depression, headache, dizziness, drowsiness, nausea, unconsciousness, coma and possible death due to respiratory failure.
