Raspberry Salmon

Ingredients

  1. 24 fresh raspberries
  2. 1/2 cup balsamic vinegar
  3. 1 teaspoon grated orange peel
  4. 4 teaspoons freshly squeezed orange juice
  5. 2 teaspoons honey
  6. Splash of red wine
  7. Olive oil cooking spray, for coating the skillet
  8. 4 skinless salmon fillets (each approximately 4 ounces in size), preferably wild
  9. Steamed asparagus, for serving

Instructions

  1. Mash the raspberries and vinegar with a fork in a small bowl. Stir in the orange peel, orange juice, honey and wine until combined. Set aside. 
  2. Coat a nonstick skillet with the cooking spray and place over medium heat. Cook the salmon until cooked through, about 4 minutes per side. Set aside. 
  3. Remove the skillet from the heat and carefully wipe away any liquid with a paper towel. Return the skillet to medium heat and add the reserved raspberry mixture. Stirring constantly, cook until just thickened, about 2 minutes. 
  4. Pour the sauce over the salmon and serve with asparagus on the side.

This was way too sweet for our taste. The glaze felt more like a fancy jam, and just overpowered the flavor of the salmon. We are fish lovers, so we actually want to taste the fish itself. This was not the recipe for us.

Delicious! I simply roasted the salmon and topped with the sauce.  Had to add a little cornstarch and water to thicken

Was scrolling for a simple yet tasty salmon meal without all the fuss of an amazing dish. Didnt have the wine nor vinegar so I substituted with shallots and wine for acidity it was super good. Will make this dish again for sure. So fresh, healthy and delicious.
