Raspberry Bellinis

Ingredients

  1. 1/2 cup raspberries, rinsed
  2. 1 tablespoon sugar
  3. 1 (750-ml) bottle Champagne, prosecco or other sparkling wine, chilled

Instructions

  1. In a small shallow bowl, mash the raspberries with the sugar until sugar is dissolved and mixture is smooth. Pour about a tablespoon of the puree into each of 4 Champagne flutes. Slowly fill each glass with Champagne (careful – it will fizz up) and serve immediately.

The idea sounds alot better than it tasted. I’m sticking to keeping it simple by using either a dash of Chambord or just making a no-brainer Mimosa.

This was quick, has eye appeal, and tastes devine! For those of us on the “no sugar/no flour” diet, Splenda was used and worked great!! Great job Dave!! 😉
