Ingredients
- 12 ounces cream cheese, room temperature
- 1/2 cup mayonnaise
- 1/2 cup buttermilk, well shaken
- One 1-ounce package ranch dressing mix, such as Hidden Valley
- 16 ounces Cheddar cheese, grated, room temperature
- 1 cup pecans, roughly chopped
- Crackers or bagel chips, for serving
Instructions
- In a stand mixer, beat together the cream cheese, mayonnaise, buttermilk and dressing mix. Add the Cheddar cheese and continue beating until thoroughly blended. Wrap the mixture in plastic wrap and place it in the freezer for 30 minutes. When firm, shape the wrapped cheese mixture into a log. Spread the pecans out on a baking sheet or a piece of wax paper. Unwrap the cheese log and roll it in the nuts to coat it on all sides. Serve with crackers or bagel chips.

Salt bomb! I agree with another review that it was just meh. The pecans are a poor choice on this. Flavor of pecans doesn’t compliment the ranch and cheeses. One guest liked it! I let him take it home
Best Cheese Log/Ball! Best made in advance so the ingredients blends better together. The only thing is the quantity is way too much for a small family. Had it for weeks, whic I ended throwing away… next time, I will cut recipe in two.
This was easy to make with ingredients you probably have on hand. Nice flavor. Good addition to a cheese board.

I liked it very much. It was simple and easy to make. It had an appealing flavor. For those of us who don’t have a full on gourmet pantry, it was nice to make this log for a change rather than just have dip for the crackers. Thank you Trisha:-)
This was a big disappointment. It tasted like ranch and cream cheese, that’s it. No complexity of flavor and no melding of the cheese and ranch. I served it at a party and everyone agreed it was just “meh”.
Had made for Christmas gift… so glad I tasted before I gave it as gift. Tooooo salty… had to throw away.
I made this and fell in love with it…so good!!! I do have some left that I didn’t coat in Peacans and was wondering if anyone knows if you can freeze it?

Really good!!! I agree with other comments that it was very salty so I added 2 more oz of cream cheese and a little more mayo. It does make a lot so you could make two logs and freeze one for later.
So intensely salty, we could not eat it–and we like salty foods as well as ranch-flavor! I would recommend starting out with about half a packet of ranch mix, and see how it goes… Makes a lot. About the only way I could see to rescue the saltiness would be to add something fresh (maybe chopped scallions or chives, or fresh herbs?), or tart (lemon juice?), or serve it with something completely unsalted, like salt-free crackers, or veggies. Waste of a pound of cheddar and a package and a half of cream cheese!
