Ingredients
- 1 (3 ounce) package ramen noodles (any flavor)
- 1 teaspoon chopped fresh parsley, or to taste
- 1 tablespoon vegetable oil
- ½ onion, chopped
- 2 large eggs
- 1 teaspoon water, or as desired
- 1 pinch salt
Instructions
- Bring a pot of water to a boil; add ramen noodles and cook for 3 minutes. Drain water and stir seasoning packet and parsley into noodles.

- Heat oil in a nonstick skillet over medium heat; cook and stir onion until fragrant, about 2 minutes. Add noodles and stir for 2 minutes more.

- Whisk eggs, water, and salt together in a bowl; pour into the same skillet as the noodle mixture. Cook and stir eggs until set and cooked through, 2 to 4 minutes.

Absolutely nothing but perfection! I did substitute the parsley and onions with shredded cheese and spicy seasoning, but it was a smash hit with the family for breakfast. 1000/10 recipe idea, will make again.

Other great additions to this would be a chopped very ripe plum or other tomato and a touch of ginger! Tomato & Eggs are a match made in heaven, especially with ginger added to the noodles! Great on pork ramen, especially. Another way to have this is to put a softly fried egg or two on top of the noodles, instead of scrambling the eggs, and a small sprinkle of chopped meat…ham, chicken, whatever…of course, I’d add a tomato and ginger to THAT too! A sprinkle of chopped green/spring onion is a really nice topper also! I just LOVE ramen noodle and egg combinations! Soooooo surprisingly delicious & so satisfying!
I have to use the Gluten-free Ramen noodles I can get from Costco and I was able to use the Better than Bullion for the flavor. Cooked the rest with the exception of adding minced garlic to the sauté as well. OMG! It’s a winner. Having celiac disease makes creativity a necessity & this one brings it! Definitely making it again… wide open for other things to try adding to it!
I enjoyed this recipe. I used ramen noodles that I purchased in bulk that did not have a spice packet. I add Salt & Pepper, Chinese Chili oil during the cooking process. I also add towards the end diced green onion and cilantro omitting the parsley. topped it with Siracha tabasco sauce and soy sauce. I suggest thinking of this as a fried rice recipe and add your favorites, next time I am adding Thai Basil!
The only change I made was using a bit of butter instead of oil and I didnt salt the eggs. It was very salty even without adding it to the eggs. It was ok but I won’t make it again.
Really fun to have pasta for breakfast! I sautéed bacon, used some bacon renderings to saute the onion, added garlic and chopped fresh spinach and herbs de provence. Then I topped it with Jack chees and put it under the broiler: Delish!
I didn’t add oregano, not a huge fan of it in general, but I added milk to the eggs instead of water, and at the end I added some chupacabra seasoning because I LOVE it with eggs. 10/10 would recommend!!

This was a fun, easy economical lunch! Funny enough, I used a pork ramen packet this first time and tasted great but didn’t look so pretty (brown tint). The second time, made with chicken and? It really didn’t have much flavor? But looked more appealing/pleasing. Used hot sauce on the chicken batch to add a little more flavor. I would make again when I want a quick easy breakfast, lunch or dinner. Thanks for the fun recipe! UPDATE: I make this so often that I now have ramen noodles on my regular grocery list!?! But, I enhanced it by pouring a splash of sesame oil and soy sauce to the “scrambled eggs” before adding them to the ramen. I have also played with ginger paste, Chile paste (sambal oelek) and shredded carrots. This is just an easy yet awesome breakfast, lunch or dinner for one! Try it!!

Delicious!!! I cracked my eggs directly into the pan and scrambled them in it. Use butter!! Butter the pan and when you’re done add broth to the bowl and more butter. It was absolutely delicious
I used butter and a little touch of soy sauce to sauté the onions. I don’t like egg yolks, so I used 3 egg whites. Topped with a little grated Parmesean cheese, salt and pepper. Turned out much better than I expected. I was hoping the whole time that the recipe wasn’t a joke and I can happily report, it was not a joke. I will make this again. ::nods head:: Yes, I will. I’ve made this for years. Easy goto meal. Tastes more like fried rice.
Made EXACTLY like recipe….not bad….a lil crumbled sausage and diced sweet peppers, ie red,yello,orange, would be perfect!
Made this with chicken ramen, liked it as is. Added parm and cracked red pepper and it is great.
