Ramen Pho

Ingredients

  1. 1 lime
  2. 1 package beef-flavored ramen with seasoning packet
  3. 1/2 red onion, thinly sliced
  4. 2 tablespoons sriracha
  5. 1 tablespoon soy sauce
  6. 1 teaspoon fish sauce
  7. 1/2 cup torn kale
  8. 1 teaspoon minced fresh ginger
  9. 4 ounces sirloin steak, very thinly sliced (6 to 8 paper-thin slices)
  10. 2 cups boiling water

Instructions

  1. Zest half of the lime, then cut it in half and juice one of the halves. Cut the other half into 2 wedges.
  2. Layer the ramen and seasoning, onion, sriracha, soy sauce, fish sauce, kale, lime zest and juice, ginger and steak in a large heatproof soup bowl. Pour the boiling water into the bowl and let it sit undisturbed for 2 minutes. Stir with chopsticks, garnish with the lime wedges and serve immediately.

First of all to address some if the reviews… pretty sure this was not meant to be an authentic “pho”… as home cooks we are just looking to replicate flavors and this does it well… make if your own. I added cremini mushrooms and I used sliced bok choy and it’s leafy tops instead of kale… DELISH!!!

This is not Pho.  Beef ramen soup maybe, but definitely not Pho.  Pho is slow cooked for hours and has spices like cinnamon and star anise.  This is like making chicken fried steak with hamburger and using jarred gravy.

This was too spicy for me. Unless you just love some spice, don’t put as much sriracha as it says.
