Ramen Noodle Broccoli Salad

This amazing dish is bursting with delicious taste. Noodles are combined with fresh vegetables, garlic, soy sauce, sugar, peanut butter, and a ginger-flavored broth. Try these out; they’re wonderful and will definitely amaze your guests!

Ingredients

  1. 3 (3 ounce) packages uncooked chicken flavored ramen noodle soup
  2. ⅓ cup creamy peanut butter
  3. 1 ½ cups Swanson® Thai Ginger Flavor Infused Broth
  4. ¼ cup soy sauce
  5. 1 tablespoon sugar
  6. 1 small red bell pepper, chopped
  7. 1 large onion, chopped
  8. 1 tablespoon minced garlic
  9. 1 pound broccoli florets

Instructions

  1. Remove and discard the seasoning packets from the soup or reserve for another use. Fill a 6-quart saucepot with water and heat over medium-high heat to a boil. Add the noodles and broccoli and cook for 3 minutes or until the noodles and broccoli are tender. Drain the noodles and broccoli well in a colander.
  2. Beat the peanut butter, broth, soy sauce and sugar in a large bowl. Add the noodles, broccoli, pepper, onion and garlic and toss to coat. Cover and refrigerate for 2 hours, stirring occasionally.

It was alright, only problem was that there was way too much onion. It would’ve been great with about half of what was instructed.

Loved this salad. Followed as directed but there is slot of liquid. It was so delicious my husband ate it warm. Hopefully some of the liquid soaks into the noodles as it chills.

I don’t like reviewing recipes when I’ve made a ton of changes, but I do feel like this recipe was the backbone to the delicious recipe I came out with. First off I didn’t use broccoli, I had some leftover cooked cauliflower I used. Also did not have the Thai inspired broth called for so after cooking the noodles went ahead and added the beef packed that came with the ramen as well as some fresh grated ginger and some fresh chopped Thai basil. I was just trying to recreate the flavors of Thai. I thought it turned out super yummy! Think this would be over the top yum with red pepper flakes added 🙂 Great recipe!!

Despite adding the hot, drained noodles, I couldn’t get the peanut butter to emulsify enough in the dressing. It had a good flavor, however.

This dish is a HIT! I needed something to take to a BBQ at a friends’ house and this seemed perfect! I had never tried the Swanson infused broths before until this recipe. I like to make my dishes from scratch and I make some pretty impressive Thai dishes so to use this broth made me hesitate for a minute. Let me just saw I WAS WRONG! This Thai Ginger Broth is legit. You can taste all of the components in this broth! I tasted the ginger. I tasted the lemongrass, lime, and soy sauce that is in there. I can tell you right now, when I don’t have the time to make this from scratch, I will most certainly, use this broth. I’m so happy with this one, I can’t wait to try the others! The ramen noodles mixed with broccoli is genius. The sauce that accompanies it is so easy to make and tastes like it took hours to make. Thanks Swanson! I will be making this for years to come.
