Rainbow Fruit Salsa with Whole Wheat Cinnamon Chips

With rosemary and garlic in the form of thin slices, this leg of lamb recipe is straightforward to make. It tastes great to cook peeled potatoes in the pan with the roast. The only additional ingredients are pan drippings-based gravy and a fresh vegetable.

Ingredients

  1. 4 whole wheat tortillas, each cut into 8 triangles
  2. olive oil cooking spray
  3. 2 tablespoons white sugar
  4. ½ teaspoon ground cinnamon
  5. 8 strawberries, chopped
  6. ½ peach, chopped
  7. ½ green apple, chopped
  8. ¼ cup chopped purple grapes
  9. ¼ cup blueberries
  10. ¼ cup crushed pineapple

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Spray tortilla triangles with cooking spray. Combine sugar and cinnamon in a resealable plastic bag. Add triangles and shake to coat. Place triangles on a baking sheet.
  3. Bake in the preheated oven until crisp, 10 to 12 minutes.
  4. Combine strawberries, peach, apple, grapes, blueberries, and pineapple in a bowl. Stir to mix . Serve salsa with cinnamon chips.
