Rachel’s Turnip Green Soup (Instant Pot)

Make a hearty, savory soup in your Instant Pot with turnip greens, ham bone broth, two kinds of beans, chicken broth, and Cajun seasoning.

Ingredients

  1. 1 teaspoon vegetable oil
  2. 1 pound smoked pork sausages, sliced (such as Conecuh®)
  3. 1 red onion, chopped
  4. 1 (32 ounce) carton chicken broth
  5. 1 (27 ounce) can turnip greens (such as Glory Foods®)
  6. 1 (15 ounce) can great northern beans, drained and rinsed
  7. 1 (15 ounce) can cannellini beans, drained and rinsed
  8. 1 (15 ounce) can stewed tomatoes, drained and chopped
  9. 1 cup water
  10. ¼ cup ham bone broth
  11. 1 (1.06 ounce) package herb and garlic soup mix (such as Lipton®)
  12. 1 tablespoon Cajun seasoning (such as Penzey’s®), or to taste
  13. 1 teaspoon garlic powder

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add oil; when hot, saute sausages and onion together until browned, 5 to 7 minutes. Transfer to a bowl.
  2. Mix chicken broth, turnip greens, great northern beans, cannellini beans, tomatoes, water, ham bone broth, garlic soup mix, Cajun seasoning, and garlic powder together in a large bowl.
  3. Pour broth mixture into the hot pressure cooker and scrape the browned bits off the bottom. Return cooked sausages and onion to the pressure cooker. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  4. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove lid.

This is excellent and SO easy! I am giving this 4 stars instead of 5 and I’ll explain. There is no need to brown your sausage and onions and then take the time and trouble to remove them from the IP. Start with step 2 and just set that mixture aside until step 1 is done. The other reason I did not rate this a 5 is because I saw no point in draining your tomatoes and beans just to add water. Chop your stewed tomatoes as the recipe calls for but then just stick them back in the can with the juices. Drain the juice off of your great northern beans because they are thicker and murkier than the cannellini beans. Swap out the water in the recipe with the tomato juice and the cannellini juice. It only makes sense. I’m not a big canned green fan but this recipe is to die for AND so easy! Thank you for sharing!
