Ingredients

  1. 1 tablespoon vegetable oil
  2. 2 tablespoons tomato paste
  3. 2 tablespoons chili powder
  4. 1 teaspoon ground cumin
  5. 1 green bell pepper, roughly chopped
  6. 5 scallions, sliced (white and green parts separated)
  7. Kosher salt
  8. 1 pound ground turkey
  9. 1 28-ounce can diced fire-roasted tomatoes
  10. 2 cups low-sodium chicken broth
  11. 1 15-ounce can black beans, drained and rinsed
  12. 1 cup crushed tortilla chips, plus more for topping
  13. Sour cream and shredded cheddar cheese, for topping (optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 minute. Add 1/2 cup water, the bell pepper, scallion whites and 1 teaspoon salt. Cook, stirring, until the bell pepper is crisp-tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 4 minutes.
  2. Stir the tomatoes, chicken broth, beans and crushed tortilla chips into the pot; bring to a simmer. Partially cover and cook, stirring occasionally, until thickened, 10 to 12 minutes. Stir in all but a few tablespoons of the scallion greens and season with salt. Top with more crushed tortilla chips, sour cream, cheddar and the remaining scallion greens.

So easy and fantastic. Added a can of pinto beans (in addition to black beans). Skipped scallions; sauteed diced onions and 1 jalapeno. Perfect heat.

Just made this chili.  I think its great!  Used sweet onion instead of scallions and added slice jalapenos for a kick!

Very yummy! If you like heat definitely add a hot pepper or some red pepper flakes. Next time I’ll try without the Tostitos.

This was great! I do a lot of turkey chilis, and this is now my favorite.  I did use only 15 oz of fire-roasted garlic tomatoes. For us, it was enough of a ration of meat to tomatoes. Great with sour cream and shredded cheese!
