Quick Peach Cobbler

The traditional Rice Krispies snacks have been given a lucky twist with these sweets. These are ideal for St. Patrick’s Day since they use Lucky Charms cereal (rather than Rice Krispies), green food coloring, and a shamrock cookie cutter.

Ingredients

  1. ½ cup butter, melted
  2. 1 cup self-rising flour
  3. 1 cup white sugar
  4. 1 cup milk
  5. 1 (28 ounce) can sliced peaches
  6. 1 teaspoon almond extract
  7. 2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Place butter in a 9×9-inch baking pan; melt in the preheating oven.
  2. Mix together flour, sugar, and milk in a large bowl until smooth. Set batter aside.
  3. Open canned peaches and add almond extract to peaches and juice. Pour peaches and juice over melted butter in the pan. Spoon batter atop peaches without mixing. Sprinkle with cinnamon.
  4. Bake in the preheated oven until bubbling and top is lightly browned, 45 to 60 minutes.

I quite liked this. I thought it had too much unnecessary butter and it would have been better with a bit less liquid (maybe my peaches were very juicy), but overall it was tasty and my 11yo who only eats bananas as fruit gobbled it up, so that’s a win in my books.

I made this peach cobbler tonight and the flavor was on point. I could have used a bit more sugar. I used 1 cup brown sugar instead of white sugar. I also used can peaches in heavy syrup and didn’t want the dish to be too sweet. I also used cinnamon sugar on top and added vanilla and nutmeg, a teaspoon each. Will make this again. I followed the recipe. Hubby said it was good, but I think I will try the suggestions of others next time using the nutmeg, cinnamon and vanilla. I think that would make this perfect. But as written, its good.

The recipe was great. I just made a few substitutions and added more sugar. I substituted the almond extract for vanilla. I used soy milk instead of the regular type of milk. I sprinkled the top with cinnamon while in the pan. It came out beautifully. It was such a comfort dessert for the family. My children are my true taste testers. They are extremely particular but they fancied it greatly!

We love this easy peasy recipe. I always add cinnamon and nutmeg. I like vanilla rather than almond extract. This is great with cherries or blackberries, as well.

I have made this twice since I found the recipe. I made a blueberry and peach. It is delicious, I made sure I used frozen fruit since it is winter and fresh is not available or fresh is to expensive I won’t buy it. I highly recommend this to everyone. It is quick and good.

This is a good and quick way to get a tasty peach cobbler. The baking time was a lot shorter than listed, mine was 35 minutes and the cake was golden brown. Yummy!

Really good served with whipped cream and/or ice cream. I followed the recipe with a few modifications due the ingredients I had on hand. 1) Substituted chopped fresh peaches sprinkled with sugar for the canned and 2) used all purpose flour with baking powder and salt instead of self rising flour.

Added just a little bit more sugar (I like it really sweet). I used vanilla extract instead of almond. I ran out of butter so I only used, the small amount that I had. Baked for an hour and 15 minutes and it was gooey perfection!
