I created this easy pimento cheese dish one day for a party. It’s a tasty and speedy substitute for anything you can buy at a store.

Ingredients
- 2 cups shredded sharp Cheddar cheese
- 2 cups shredded Colby cheese
- 2 (4 ounce) jars diced pimento peppers, drained
- ½ (16 ounce) jar creamy salad dressing (such as Miracle Whip®), or as needed
- salt and pepper to taste
Instructions
- Combine Cheddar cheese, Colby cheese, pimento peppers, salt, and pepper in a medium bowl. Stir in enough salad dressing to achieve desired texture. Mix until well combined.

I didn’t have colby cheese, so I used all mild cheddar. I made half the recipe: 2 cups shredded mild cheddar, 1 drained 7 oz jar of diced pimentos, 1 cup Hellman’s mayo (we don’t use Miracle Whip). I think I’ll add more shedded cheese, because the mixture is a little too wet.
Used all cheddar, but yum!
Very good, however, it did not had the cheese flavor I was wanting. I will cut the Colby cheese by half and increase cheddar cheese by same amount. I will used extra sharp cheddar.
Used all sharp cheddar, not colby. Use light mayo rather than miracle whip. Delicious!
A very easy and tasty recipe. My husband and father love it. We did use a 5 year aged super sharp cheddar instead of sharp. And it was Delicious. Will definitely go into my recipe box.
I add just a dash of garlic power or salt , gives it just a little extra flavor.

I’m on a quest lately to find the perfect homemade pimento spread since the stuff you buy in a tub has trans fat in it. I make a version of my own that usually has someone asking for the recipe but I wanted to try others. This one has lots of pimentos which I like but it calls for Miracle Whip and in most of the South, that’s sacrilege. We Southern cooks use real mayo…it makes a huge difference. I think, not to be stuck up but I am going to stick with my recipe and I think I’ll post it soon.
Pretty good. I used some cream cheese I had (about 2 oz) and added a little mayo to the Miracle Whip since I did not have enough of it. And, I added a little sugar and a sprinkle of garlic powder to better suit my tastes. Seems like it is missing something, but I checked other recipes, but they had nothing else in them.
This recipe is fantastic. I used just enough Miracle Whip light to moisten the cheese and used half of the cheese and one jar of pimentos. I was very surprised it tasted exactly like the ‘real stuff’!
Just made this, minus the pimentos, and it makes a tasty snack. Just a smidge on a multi-grain cracker along with a few olives or (my fave) sweet gherkins and you’re good to go. I’m thinking about adding some paprika to give it a kick and may try it in sandwich form on some toasted multi-grain bread with cold, sliced grilled chicken.
I did not care for this recipe. Disappointing. Even tried it without the miracle whip and used good mayo instead.
Made this with Sharp Cheddar only. Husband, who is a pimento cheese fan, said it was delicious. 😉
Loved it . Added a piece of low sodium bacon. Let it set over night. For the flavors to come together.
Very easy, taste and texture was perfect. I used 4 c of sharp cheddar (because it was all I had) and real mayonaise.
I use 8 oz. sharp cheddar, 4 oz. pimento and 1/3 cup regular mayo, plus pepper.

Great base recipe – i added a little cayenne, and found that i didnt need as much mayo as the recipe called for.
tastes terrible, but it could have been the Miracle whip. It seems store bought.
This require A LOT of pimentos. I would halve the pimentos used. Also, used only mild cheddar (hubby doesn’t like sharp). Definitely use again. Taste like the good old classic.
