Quick and Easy Garlic Broccoli with Parmesan

Even people who dislike vegetables are requesting more of this dish for garlic broccoli! When all you have time for at night is the microwave, it’s ideal.

Ingredients

  1. 1 (12 ounce) package frozen broccoli
  2. 1 clove garlic, minced
  3. ¼ cup grated Parmesan cheese, plus more for serving
  4. salt to and freshly ground black pepper to taste

Instructions

  1. Place broccoli in a microwave-safe dish and microwave on high until defrosted, 3 to 4 minutes; they should be defrosted but not cooked all the way.
  2. Add 1/4 cup Parmesan and garlic, stir, and cook for another 2 to 3 minutes. Season with salt and pepper and stir.
  3. Serve with extra Parmesan sprinkled over top.
  4. If I serve this to guests, I saute the garlic and broccoli on the stove and then add the Parmesan. When it’s just my roommate and I, this way is even simpler and creates fewer dishes. Always a plus! It tastes great either way.
