Quick and Easy Corn Casserole

Because you don’t have to peel delicata squash before cooking it in the microwave, there is very little preparation required. Eat it as a side dish or include it into a salad or grain bowl. Make the dressing different depending on what you are serving it with.

Ingredients

  1. cooking spray
  2. 1 (11 ounce) can Mexican-style corn
  3. 1 cup shredded Cheddar cheese
  4. 1 (6 ounce) can sliced black olives, drained
  5. 2 tablespoons chopped green chilies
  6. 2 tablespoons sliced green olives

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 1-quart casserole dish with cooking spray.
  2. Mix corn, Cheddar cheese, black olives, green chilies, and green olives together in a bowl; pour into prepared casserole dish.
  3. Bake in the preheated oven until cheese is melted and bubbling, about 25 minutes.

Made as written and even though the green olives seemed odd, they worked! The thing that didn’t work was the cheese. I think things would work better if you just put the cheese over the top of the corn mix so that it creates a crust. Cheddar mixed in with wet corn, olives, etc. does not melt well and when it does finally melt it decides to do so at the bottom of the dish taking half of the corn with it to its demise against the will of the non stick spray. I recommend saving the cheese for the top or either using a better melting cheese.
