Easter dinner guests love to eat this ham meal. When it finally vanished, everyone kept going back. They adored this glaze, which I actually obtained from a church member.

Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 4 skinless, boneless chicken breast halves
  4. 3 tablespoons ketchup
  5. 3 tablespoons white sugar
  6. 2 tablespoons soy sauce
  7. 2 tablespoons lemon juice
  8. 1 teaspoon ground black pepper

Instructions

  1. Warm oil in a large skillet over medium heat. Sauté onion in oil until translucent, 3 to 4 minutes.
  2. Add chicken to onion in the skillet; cook until chicken is lightly browned, 1 to 2 minutes per side.
  3. Combine ketchup, sugar, soy sauce, lemon juice, and pepper in a bowl; mix well. Pour over chicken; bring to a boil, then reduce heat.
  4. Cover and simmer until chicken is no longer pink in the center and the juices run clear, 25 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I always make an AR.com recipe first time per instructions out of sincere respect to the recipe creator. I saw right away I would have to double the sauce–which was so yummy, that I abandoned a moment of caution and added another round to my doubled sauce—which kinda had for me a “Polynesian” kind of flavor, where some pineapple chunks would nicely suit it; I’ll give that a try next time—thank you, Anny!!

I’ve been making this recipe for more than 25 years and it’s great! I originally found the recipe on the back of a bag of frozen chicken breasts. Preparation is the same, but increase cook time to 45 minutes. It’s a staple in my house.

If you double up, don’t make the mistake I did and only use a small amount of soy sauce. I doctored it enough to be edible, but am not impressed. I’ll stick with my usual honey garlic chicken over rice.
