Ingredients
- 2 English cucumbers, peeled
- 1 teaspoon salt, divided, or to taste
- 2 tablespoons garlic-seasoned rice wine vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon white sugar
- ¼ teaspoon toasted sesame seeds
Instructions
- Cut cucumbers into long, thin noodle shapes using a spiralizer set to the thinnest setting.
- Place cucumber noodles in a fine-mesh strainer set over a bowl. Sprinkle with 1/2 teaspoon salt and toss until combined. Let cucumber stand until moisture is drawn out, about 30 minutes.
- Whisk rice vinegar, sesame oil, soy sauce, and sugar together in a bowl until sugar is dissolved. Add cucumber; toss gently until coated. Season with remaining 1/2 teaspoon salt; sprinkle with sesame seeds.

I cut it to ¼ because there’s only 2 of us. It was superb! Not a thing I would change about it, and that’s almost never true.
I made this salad for a few years now and am totally addicted. I didn’t have any rice vinegar at the time so I substituted plum vinegar. I’ve been making it this way ever since and can’t imagine any way to make this dish any better. So umami I have to use chop sticks to get one strand at a time to make the sensation last. This is the reason I grow cucumbers.
Loved this! I used Kosher salt and low sodium Tamari. Toasted the sesame seeds in a dry pan and let cool before adding. The noodles stayed nice and crispy! I did add a bit of minced garlic and fresh ginger because…just yes. Will make again!

This was a big hit with my family! I used Mirin instead of rice vinegar because that’s all I had on-hand, and increased the number of sesame seeds because – why not? Will definitely make again.
I love that this is spiralized. This is such a fresh, easy and delicious salad. My 6 year old would eat an entire cucumber this way in 4 seconds, if I let her. I made it on the side of Thai Peanut Beef (from another site – www.damndelicious.net) and it was a perfect companion. Plan at least for half a cucumber per person, if not more – that seems to only work out to 3-4 ‘spaghetti’ bites! Oh, and you can save the cucumber juice for a cucumber gimlet or martini with a little extra sugar.
Turned out delicious. Added some thinly sliced green onions and a few red pepper flakes. Used regular rice vinegar and added garlic powder. I will definitely make this again!
We make these a lot especially when the garden is producing. We change the amount of the ingredients or even leave something out occasionally to vary the flavor.
My family and I LOVE this recipe! It tastes just like a cucumber salad I had at a restaurant once and wanted to replicate. so delicious with Asian inspired foods or with salmon and rice and we are having it tonight. My kiddos will eat it alongside anything! I don’t have a spiralizer so just cut the cucumber however I’m inspired.

This was delicious and I wish I had doubled the recipe. I used regular cubes and sliced them thinly. I added fresh minced garlic to my sesame oil. Everyone loved it.

This was good and got better as it sat. It was light, had great texture, and was the perfect side for my Asian themed meal. I left a little of the peel on the cucumber for color but other than that made it as written. I would more than likely leave out the sugar next time but that is the only change I would make.
