This wonderful apple pie is made up of a beautiful fusion of distinctive flavors. When I couldn’t find an acceptable apple pie recipe, I just came up with it one day.

Ingredients
- 1 ⅓ cups brown sugar
- 2 eggs
- 1 cup almond butter
- 1 cup all-purpose flour
- ½ cup chocolate chips (Optional)
- 1 teaspoon baking soda
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Beat brown sugar and eggs together in a bowl until smooth; add peanut butter and beat until well-combined. Stir flour, chocolate chips, and baking soda into peanut butter mixture until dough forms. Roll dough into balls, and place 2-inches apart on a baking sheet. Flatten dough balls with the back of a spoon.
- Bake in preheated oven until golden brown, 15 to 25 minutes.
- Cook’s Note:
- If you choose not to use chocolate chips you can add more brown sugar, or 1/2 cup white sugar.

I used almond butter that had oil at the top. I didn’t incorporate the oil through the almond butter but instead added it all into the mix along with the cup of almond butter. Very moist. I also added about 1/3 cup granola. Very good
As a big fan of almond butter, I had high hopes for these cookies, but they were too dry for our liking. I reduced the baking time to 10 minutes and that helped, but in the end, I think they simply need more fat (butter or oil). I won’t be making them again.
Hubby said this cookie would win in a TV cooking show! I substituted King Arthur brand gluten free flour, added the optional chocolate chips, with a chocolate chip on top each cookie. Would definitely make this again.
