Ingredients
- 1 cup maple-flavored pancake syrup
- 5 tablespoons pecans, toasted and chopped
- 1 cup buttermilk pancake mix
- 1 cup cold water
- 1/3 cup canned pumpkin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Nonstick vegetable cooking spray
- Butter, room temperature
Instructions
- Pecan Syrup Preparation:
- Combine maple syrup and pecans in small microwave-safe bowl. Heat in microwave on high until hot, about 25 seconds. Set pecan syrup aside and keep warm.
- Pancake Preparation:
- In a medium bowl, whisk pancake mix, water, pumpkin, cinnamon, and ginger until just blended (do not over mix; mixture should be lumpy).
- Spray a heavy griddle with nonstick spray and heat griddle over medium heat. Spoon 2 tablespoons of batter onto griddle to form each pancake. Cook for 2 minutes or until bubbles appear, then turn pancakes over and cook for 2 minutes longer. Transfer pancakes to plates. Top with butter and serve with warm pecan syrup.

I just tried this recipe. Did a little different. Use more water but carefully added more pumpkin spice instead what it’s called for and was wonderful
These pumpkin pancakes were a complete failure. The ratio of pumpkin to other ingredients didn’t work. I was left with thick wet centers of the pancake. I tried fixing the batter but that didn’t help either. I had to throw out the batter and pancakes. I wish I had read the reviews first. So much for having a nice Thanksgiving day breakfast of delicious pumpkin pancakes—not!
I made these using Pamela’s gluten-free pancake mix, and altered by adding an egg and another 2 tablespoons of flour, as I found the batter to be too runny. They turned out melt in your mouth DELICIOUS!
Good recipe for a mix! It’s not going to tasted likescratch but still good! You must use complete Pancake mix not bisquick. I just bought .99 cents complete buttermilk pancakes mix just the add water kind and it worked great! If you use a mix that adds milk and eggs, it might not turn out. I think thats the confusion with this recipe. It took me 5 min to make. Will make again.
Wish I had read some of the reviews before I decided to try these. If you’re craving pumpkin pancakes find a from scratch recipe. The consistency of these were terrible. Which makes sense if you think about it, the box mix isn’t meant to have wet foods thrown into it and cook correctly.
I ended up throwing out the batter and pancakes. I’ve made other Sandra Lee recipes and thought they were great shortcuts. This was just gross. Browned on the outside, slimy consistency inside…
After the first batch, I then tried cooking a second batch longer than the recipe states and nothing about the inside consistency changed.

Easy and very yummy!
It should be more clear on what type of buttermilk pancake mix we should be using here. It should also be more clear as to if we are supposed to follow the instructions on the box of mix and then add these remaining ingredients or not. We tried it both ways and we used a whole wheat buttermilk pancake mix. When we just used the dry powder and the water it left a really funky after-taste. When we followed the recipe on the box and then just added the puree and the spices, leaving out the water it tasted better. The syrup was fantastic though, major points for the syrup, simple and yummy!
These were good, but I probably wouldn’t bother to make them again. I definitely agree with one of the other reviewers that you should use a little less water (Krusteaz Pancake Mix calls for only 3/4 cups of water to one cup mix), because the batter was really runny with a full cup.
Does Sandra say to use Bisquick in this recipe? No, so why does everyone use the wrong ingredients, then say how awful the recipe is? Go buy the proper ingredients before you rate a recipe poorly. Some people are ridiculous! This is a good pancake breakfast particularly during the holiday season. If you try it, do it right! You will enjoy the great taste.
