Ingredients
- 2 1/2 cups diced fresh pumpkin (about 1/2 a small pumpkin), seeds and skin removed
- 1/2 teaspoon pumpkin pie spice/ground mixed spice
- Juice of 1 lime
- 2 to 3 tablespoons maple syrup, to taste
- 2/3 cup milk (or any dairy free milk)
- Ice cubes
- Hot pepper sauce, such as Tabasco, to serve, optional
Instructions
- Put the diced pumpkin and spice in a saucepan, just cover with water, and heat until simmering. Cook gently for 10 minutes until the pumpkin is tender. Drain through a sieve and leave to cool a little.
- Transfer to a food processor or blender and add the lime juice, 2 tablespoons of the maple syrup and the milk. Blend until completely smooth. Taste for sweetness, adding a little more maple syrup if you like.
- Pour into two glasses, add several ice cubes to each, and sprinkle with hot pepper sauce if you like very spicy flavors.
