Ingredients

  1. cooking spray
  2. 1 ¾ cups all-purpose flour
  3. 2 teaspoons ground cinnamon
  4. 1 teaspoon baking soda
  5. 1 teaspoon salt
  6. ½ teaspoon ground ginger
  7. ¼ teaspoon ground nutmeg
  8. 2 large eggs
  9. ½ cup white sugar
  10. ½ cup light brown sugar
  11. 1 (15 ounce) can pumpkin puree
  12. ½ cup vegetable oil
  13. 1 teaspoon vanilla extract
  14. 2 cups peeled and chopped Granny Smith apples

Instructions

  1. Place an oven rack just below the center level of the oven and preheat to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray and set aside.
  2. Combine flour, cinnamon, baking soda, salt, ginger, and nutmeg in a large bowl; mix well.
  3. Beat eggs in a bowl with an electric mixer until foamy. Add white and light brown sugars and mix until well combined. Stir in pumpkin puree, oil, and vanilla until well blended. Add wet ingredients to the dry ingredients and stir until just combined. Stir in chopped apples and pour mixture into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted into the center of the bread comes out clean, 55 to 65 minutes. Cool in the pan on a wire rack for 15 to 20 minutes, then remove from the pan and cool completely.
  5. Any firm baking apple may be used, such as Fuji or Golden Delicious, instead of Granny Smiths.
  6. If desired, substitute 1 tablespoon pumpkin pie spice for the nutmeg, ginger, and cinnamon.
