Ingredients

  1. 1 (1 1/2-pound) whole pork loin
  2. ¼ cup red chile paste
  3. 1 tablespoon hot sauce
  4. 1 teaspoon ground cumin
  5. 1 teaspoon ground chili powder
  6. 1 (16 ounce) can tomato sauce
  7. 1 (16 ounce) can low-sodium chicken broth
  8. 1 (16 ounce) can low-sodium great northern beans
  9. 6 slices bacon, cut into 1-inch pieces
  10. ½ cup wild rice
  11. ¼ cup diced onion
  12. ¼ cup diced jalapeno pepper
  13. 1 cup shredded Monterey Jack cheese

Instructions

  1. Place the pork loin into a slow cooker. Mix red chile paste, hot sauce, cumin, and chili powder together in a small bowl. Rub chile paste mixture over pork.
  2. Stir tomato sauce, chicken broth, beans, bacon, wild rice, onion, and jalapeno pepper together in a large bowl; pour into slow cooker, coating pork.
  3. Cook on Low until flavors are combined, 9 to 10 hours. Remove cooked pork from the sauce and shred using 2 forks. Return to the slow cooker and mix well.
  4. Top individual servings with shredded Monterey Jack cheese.

I’m glad we tried a different chili recipe, but unfortunately, this was our least favorite chili recipe we’ve made. I’ll stick to my regular chili recipes.
