I just came up with a simple slow cooker chili recipe. can easily be changed up by using other ingredients. For a quick dinner, serve with corn muffins and a light tossed salad.

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 (15 ounce) cans pinto beans, drained
- 1 (28 ounce) can whole peeled tomatoes, broken apart by hand
- 1 (15 ounce) can tomato sauce
- 1 (10.75 ounce) can tomato soup (Optional)
- 2 tablespoons chili powder
- 2 tablespoons white sugar
- 2 tablespoons Italian seasoning
- 2 teaspoons garlic salt
- 1 pinch cracked black pepper to taste
- 4 fluid ounces beer
Instructions
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer beef mixture to a slow cooker.
- Stir pinto beans, tomatoes, tomato sauce, and tomato soup into beef mixture.
- Mix chili powder, sugar, Italian seasoning, garlic salt, and pepper together in a bowl; stir into beef mixture. Add beer.
- Cook on Low, 6 to 8 hours.
- Water can be substituted for the beer.
- Any variety of beans can be substituted for the pinto beans.

Yes, easy and great tasting. Did not add the Italian seasoning though.
Pretty Easy Chili Haiku: “Love whole tomatoes! Squish’em with my hands, such fun! Subbed broth for the beer.” My daughters loved dumping the measured ingredients into the crockpot, along with breaking up the tomatoes. I guess I’ve grown accustomed to using canned diced tomatoes in chilis that this was unexpected! Took cook’s note and instead of water, used chicken broth for the beer. This was a pretty good chili, but alas, the Italian Seasoning was a bit much – next time around, I would halve if not quarter how much of it goes in.
I thought this was good, but next time I will reduce the Italian seasoning by half, as it somewhat overpowered the rest of flavors. I may also reduce the sugar by half as the chili was a little too sweet for my liking. My house sure did smell good when I got home from work, and it was nice to have dinner ready and waiting.
