Prawn Banh Mi

This recipe is for you if you’ve been trying to find a healthy doughnut recipe. All the flavors are present when air-fried, coated with cinnamon-sugar, or covered in a glaze—but none of the fattening calories!

Ingredients

  1. 1 large carrot, peeled and shredded
  2. 1 stalk celery, chopped
  3. 2 scallions (green onions), chopped
  4. ¼ cup rice vinegar
  5. ⅓ cup chopped fresh cilantro
  6. 3 tablespoons low-fat mayonnaise
  7. 3 tablespoons low-fat plain yogurt
  8. 1 tablespoon lime juice
  9. ⅛ teaspoon cayenne pepper
  10. 3 (12 inch) French baguettes, cut into halves
  11. 1 pound frozen cooked prawns, thawed and tails removed
  12. 18 thin slices cucumber, or more to taste

Instructions

  1. Combine carrot, celery, and scallions in a bowl. Pour vinegar over vegetable mixture and toss to coat; set aside to marinate.
  2. Stir cilantro, mayonnaise, yogurt, lime juice, and cayenne pepper together in a bowl. Spread about 2 teaspoons cilantro sauce onto bottom piece of each baguette.
  3. Remove vegetables from vinegar using a slotted spoon, discarding vinegar. Spoon vegetables over cilantro sauce layer on baguette pieces.
  4. Mix prawns in the remaining cilantro sauce and arrange 10 prawns over vegetable layer; top with cucumber slices. Place top piece of baguette over cucumber layer, creating a sandwich.
  5. Twelve slices of bread can be substituted for the baguettes if desired.

I enjoyed this different type of sandwich. I used shrimp, but mine were raw so I sauteed them in a little butter first, and then assembled it all on a seeded roll. The sauce had a nice tang and spicyness to it. Although I liked it, I found it a little messy to eat with contents falling out of the roll. Still good, though. Thanks J9.

This is a delicious and filling sandwich with many layers of flavor. The sauce had just the right amount of spiciness for us, and the veggies give it a nice crunch. I cooked fresh shrimp rather than using frozen, and picked up a nice 5-grain roll from the bakery. I can see serving this with a nice Asian noodle salad. Enjoyed everything about this sandwich and wouldn’t change a thing. I consider this a gourmet sandwich and would serve to company.
