Potato Chip Bacon Brownies

Ingredients

  1. Nonstick cooking spray, for the parchment
  2. 8 slices bacon
  3. 2 sticks (1 cup) unsalted butter
  4. 2 cups sugar
  5. 3/4 cup unsweetened cocoa powder
  6. 2 teaspoons vanilla extract
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon salt
  9. 4 large eggs
  10. 1 1/4 cups all-purpose flour
  11. 1 1/2 cups semisweet chocolate chips
  12. 2 1/2 cups lightly crushed potato chips with ridges

Instructions

  1. Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with parchment, leaving a 3-inch overhang on all sides. Spray the parchment with cooking spray.
  2. Put the bacon in a cold, medium skillet, then turn the heat to medium high and cook, stirring often, until very crispy, about 10 minutes. Drain on paper towels and crumble. Reserve the fat in the skillet.
  3. Melt the butter in the skillet with the bacon fat over medium heat. Add the sugar and stir until starting to dissolve, about 1 minute.
  4. Beat together the cocoa powder, vanilla, baking powder, salt and eggs in a large bowl until smooth, then beat in the butter mixture. Add the flour and stir until just incorporated. Stir in the chocolate chips, half of the bacon and 1 cup of the potato chips. Scoop into the prepared baking pan and smooth with an offset spatula. Sprinkle with the remaining bacon and chips, pressing them lightly onto the surface of the batter.
  5. Bake until a toothpick inserted in the center of the brownies comes out with a few crumbs adhering, 25 to 30 minutes. Cool in the pan, then transfer to a cutting board and cut into 16 squares.

They were very good right out of the oven but had a weird aftertaste the next day. I think it was the bacon grease.

We loved them! Used 1/2 cup of chocolate chips to tone down the sweetness but that was the only change. Still delicious!

Sounds great and I LOVE the show  but I’ll have to try this one again. Step 3 should say stir until butter melts instead of until sugar starts to dissolve. The sugar never started to dissolve and I stirred until I burned myself, waiting for the sugar to dissolve. :(. I found a YouTube of the show and saw hers didn’t either. So now I know what it should look like and I’ll try again one day!!

Very good.  When I saw this Trisha make these I thought Ewe! But the more I considered it, I had to try them, as I do love sweet/salty.  I followed the recipe as written.  I didn’t think that they held a lot of bacon flavor, I believe the chocolate over powered the bacon flavor but with 2 sticks of butter, it may not have infused much anyway.  Since I live in the heart of PA Dutch country, my potato chips were like kettle chips (potatoes, lard, salt) maybe a more processed chip would offer more flavor within the brownie like a Ruffles type.  A glass pan may cook in the time the recipe recommends but  9 x 13 non-stick pan(dark) took 40 minutes.   The more I ate them, the more they appealed to me. They are very dense.  They could be cut into smaller portions and still be a satisfying treat.

The sweet and salty idea sounded scrumptious! I unfortunately didn’t have plain chips and bacon on hand so I substituted sausage and salt and vinegar chips instead! SO GOOD! Love that you can be creative and put your own touch on the brownies. Highly suggest.

I am making these brownies as I type.  My only issue is they are taking a LONG time to cook.  I’m well past 30 minutes.  It’s going on an hour and they are still very moist in the center.  Did anyone else have this issue?  I made them as per the recipe, oven was preheated and used the 9 x 13 pan.   I actually took them out of the pan using the parchment paper, they sort of expanded into this big blob, so I sat that on a baking sheet and am trying to get them to finish that way.  I sampled an edge that was done and that was delicious.
