Ingredients
- 1/4 cup olive oil
- 1/4 cup dry red wine
- 4 cloves garlic, chopped
- 1 tablespoon finely chopped fresh oregano, plus more oregano for garnish
- 2 (1-pound) pork tenderloins
- Salt and freshly ground black pepper
- Yogurt-Tomato Sauce, recipe follows
- 4 grilled pita pockets, for serving
- Mesclun greens or baby spinach, for serving
- Thinly sliced red onions, for serving
- 1 pint Greek yogurt
- 2 cloves garlic, finely chopped
- 1 plum tomato, seeded and finely diced
- 2 tablespoons capers, drained
- 1 tablespoon finely chopped fresh oregano leaves
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper
Instructions
- Whisk together oil, wine, garlic and oregano in a baking dish. Add the pork and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight.
- Preheat grill to high.
- Remove pork from marinade and season with salt and pepper. Grill until golden brown on all sides and cooked to an internal temperature of 150 degrees F. Let rest 5 minutes and slice into 1/4-inch thick slices.
- Build gyros by drizzling each pita with the yogurt sauce, then adding mesclun, onion, and meat. Drizzle with more sauce and garnish with oregano.
- Combine all the ingredients, cover, and let sit in the refrigerator for at least 30 minutes before serving.

I’ve made this recipe over and over again! It’s delicious and simple… don’t skip using the fresh oregano. Going to make this using beef and chicken this week for a dinner party.
I’m a huge Bobby Flay fan with the mix of vibrant flavors however, the yogurt sauce didn’t work for me. I typically love yogurt sauce but the oregano flavor was over powering. Maybe just cut way back on it? Maybe I overdid it?

it was amazing. it’s too cold here so i seared the tenderloins then broiled them in the oven at 475 for 18 min (or until pork reaches 145 degrees). I also used regular yogurt and drained it and added a little chopped cucumber. a new recipe on the weekly rotation Thanks Bobby!!!
I was doing my usual run on the treadmill, plugged into the TV and the food channel. Yep, the food channel. My fave for loosing weight. Ha Ha. Anyway, this looked so easy and delicious. I finished my workout and ran across the street to the grocery and purchased all the ingredients. I came home looked the recipe up, printed it off and made it as written. It was PERFECT and DELICIOUS. My husband loved it as well. It turned me on the joys of Greek yogurt. I make lots of sauces with it now. I thought it was an easy recipe to follow and I grilled the pork on an indoor grill as the weather was bad. Worked just fine. Thanks Bobby!
Forget taco night!! Watched this and made it the same night, my kids went bezerk over it! Now it is a weekly request, GYRO night! Easy, flavorful and healthy! If you’re lucky enough to have access to Trader Joe’s, their pork tenderloin is reasonably priced. They also carry their own Tzatziki sauce. Talk about easy mid-week dinner for family of five….. I marinated the pork for 4 hours and it was awesome. I have never eaten a gyro but I can tell you this recipe rocks! Its the only gyro I ever want to eat.
