Pomegranate Gelatin

Ingredients

  1. 2 cups pomegranate juice, not from concentrate
  2. 2 envelopes unflavored gelatin
  3. 2 tablespoons sugar
  4. 1/2 cup pomegranate seeds

Instructions

  1. Place 1/2 cup of the pomegranate juice into a medium mixing bowl and sprinkle the gelatin on top. Set aside.
  2. Place the remaining juice and the sugar into a small saucepan and place over high heat. Bring just to a boil. Remove from the heat and add to the juice and gelatin mixture, stirring to combine. Place the bowl into the refrigerator and chill, just until the mixture begins to set up, approximately 30 to 40 minutes. Remove from the refrigerator and stir in the seeds. Place into a 2 cup mold of your choice or 4 1/2 cup individual molds and chill until set.

Thought I had pomegranate juice, but I had natural black cherry juice, not from concentrate, so I used that, perfect. I even had jarred cherries to put in it, but I made only a half recipe to test it out at first, so I didn’t add the cherries bc I felt it was possibly wasting more good ingredients. Now that I know it works, I will make it again with cherries mixed in. I think I might up the amt of sweetness a bit, but not a must. If you have some whipped cream, that would be a good idea too.  I have other natural juices, I might try those too. The gelatin firms up quickly. I put it in one glass bowl too.  I also have small individual silicone ‘cupcake’ cups that would make nice gelatin molds too. Let your imagination guide you!

I used a pomegranate juice called Lowell from World Market, which was not from concentrate. I too added more sugar as well as cherry vodka to make some upscale jello shots: 3c pom juice, 3+ packets gelatin, 1/2 cup sugar, and then mixed in 1 cup cherry vodka at the stage when Alton mixes in his arils. Easy and delicious!

We’ve used this recipe twice now using POM and both times it’s come out wonderfully. I don’t know what we’re doing differently (we use Knorr unflavored gelatin if that makes a difference), but I thought I’d throw it out there that it can be done using POM.

I could not for the life of me find Pomegranate juice that actually wasn’t from concentrate. I did however, find 100% Black Cherry juice. I used that, and it’s pretty tasty. My mom thought it was a bit on the bitter side, but I rather liked the taste. It’s not overly sweet, but if you want it a little sweeter, add more sugar.

As the person under me noted, Pom didn’t work for this recipe. That’s because Pom is made from Pomegranate concentrate, it’s not 100% juice like it claims on the front of the bottle. Make sure to read the back of the bottle before trying this recipe.

Lauren I am an experienced cook and I followed the directions to the letter including making sure my pomegranate juice was not from concentrate. When I added the 2 envelopes unflavored gelatin to the pomegranate juice it turned the color of the vibrant Wonderful Pom juice to a brown color similar to that of milk chocolate, most unappealing. The end product was way too gelatinous…extremely rubbery. You described it as, “…horrible, dense brown block.” I couldn’t agree with you more. But being that this was a recipe from Alton Brown I decided to serve it anyway and hope for the best. I managed to cut a sliver and gave everyone a taste. NOT GOOD. Besides looking unappealing, the texture was extremely dense. It was so rubbery it could have been cut into cubes. UGH not the beautiful mold shown it the picture I had hoped for. The taste was very bland. All agreed, we sent it to the trash.

Anybody know where I can find that mold or similar individual molds. I have been searching online but cannot find any individual fluted molds.

This recipe is so labor-intensive (I have to make my own juice) I figured I wouldn’t make it more than once. It turned out so perfectly I’ve ended up making it regularly for months. It looks fancy, so it works if you need an special occasion dessert. It’s incredibly healthy and works when I’m making desserts for people who need fat-free or gluten-free food. I even made it without the extra seeds when my kids had upset stomachs and couldn’t handle solid foods yet. An absolutely delicious recipe!

I failed to read the “not from concentrate” part of this recipe, and while my mold isn’t yet done, I don’t have high hopes for this. Because I never buy juice from concentrate, I did look for real pomegranate juice but couldn’t find any. Anywhere. Where did you get yours?
