Instructions

  1. Place 15 mini phyllo shells on a baking sheet and bake at 350 degrees F until toasted, 3 to 5 minutes. Fill each shell with 1/2 teaspoon fig jam, a 3/4-inch cube of brie and some chopped walnuts. Return to the oven until the cheese is bubbling, about 10 minutes. Top with pomegranate seeds.

These are delicious, easy to assemble and always a hit. After seeding a pomegranate, I freeze the leftover seeds making it even easier to assemble when your ready to make them again.

Loved how it looked, not so much the taste. Something was just off. I’ll try to make this again to figure out the problem. My guests thought something tasted very sour. I first thought it was the pomegranate, but it wasn’t sour.

I loved this! So easy to assemble and much easier to serve than a traditional baked Brie. I omitted the walnuts as not everyone in my family likes nuts. Trader Joe’s sells a Brie in a rectangle shape, so it was easy to cut into cubes.
