Poached Apples with Vanilla Cinnamon Syrup

Ingredients

  1. 4 granny smith apples, peeled with the stem on
  2. 3 cups of sugar
  3. 2 vanilla beans, split and scraped
  4. 4 cinnamon sticks
  5. 2 quarts of water
  6. Juice of one lemon

Instructions

  1. In a roomy one gallon pot place peeled apples, vanilla, cinnamon and sugar. Cover with water then bring to a simmer over medium to low heat for twenty minutes. Once the apples are soft enough, pierce with a knife. Remove the apples with a slotted spoon to a holding plate. Reduce poaching liquid to a light syrup, then place the apples back in sauce pot and hold on warm until ready to serve.
  2. Use four small serving bowls with matching underliner plates then place one apple in the middle of each bowl. Pour warm syrup over each apple and then garnish cinnamon sticks and vanilla beans.

I’m going to be wrapping these apples in puff pastry later, but I’m happy with how they turned out. I found my apples were done in around 10 min after simmering so keep an eye on them. I also found the reducing step to take quite awhile, but in all fairness, the recipe doesn’t really say how long it will take. I don’t mind though as my kitchen, and my whole house, smelled great and I felt a bit sad when it was time to stop. 🙂

So easy to make! I didn’t have vanilla beans so I used vanilla extract. The syrup was delicious, so I’ve saved the left overs for other garnishes. This recipe made my house smell wonderful and the apples were delicious! Reducing the syrup took longer than described. Put the flame on high once you have removed the apples and let the liquid reduce down. It took a good 40 min before I stared to get a syrupy consistency. Otherwise, it was quick and easy.

This recipe never said what to do with or when to add the lemon juice. Granted some people may know but I venture to guess, someone hunting for this simpla a recipe wouldn’t (i.e. like me) :_(

I’ll make the best of it but it shows poor planning and review of Food network staff.

I made this dish for Thanksgiving dessert. I didnt exactly have syrup at the end, but I poured the “syrup” over the apples. I topped it with homemade whipped Cream, and (store bought)Vanilla Ice Cream. My family absolutely LOVED it. And I’m ordered to make it again for Christmas!!
