The zucchini pancakes are popular! I’ve been making these as “Mom” for years. My entire family adores them. Put some sour cream over top before serving.

Prep Time: 15 mins
Cook Time: 40 mins
Total Time: 55 mins
Servings: 8
Yield: 1 9-inch torte

Ingredients

  1. ½ cup unsalted butter
  2. ½ cup white sugar
  3. 2 eggs
  4. 1 cup unbleached all-purpose flour
  5. 1 teaspoon baking powder
  6. 1 pinch salt
  7. 12 Italian plums, halved and pitted
  8. 1 tablespoon white sugar
  9. 1 teaspoon ground cinnamon, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Arrange a rack in the lower third of the oven.
  2. Cream butter and 1/2 cup sugar together using an electric mixer in a mixing bowl. Add eggs and mix well. Sift flour, baking powder, and salt into the batter; beat to mix well. Pour into an ungreased 9-inch springform pan.
  3. Cover the batter with plums, skin-side down. Mix 1 tablespoon sugar and cinnamon together in a small bowl and sprinkle over the top.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Remove from the oven and let cool to room temperature, or serve warm.

Not too sweet and a little dry. Best served with ice cream or yogurt. Tasted fine
