Ingredients

  1. 2 tablespoons olive oil
  2. 1 large plantain
  3. 1 sweet potato, peeled and diced
  4. 1 bunch asparagus
  5. Chayote squash, sliced
  6. 4 tomotillos, chopped
  7. 1 tablespoon herb butter

Instructions

  1. Saute all ingredients in hot pan with olive oil for 6 to 8 minutes until sweet potatoes are tender. Finish with salt, pepper and herb butter.

This isn’t that great. I think it would be better without the Asparagus
