Ingredients
- 2 sleeves buttery round crackers, crushed
- ½ cup melted butter
- ½ gallon vanilla ice cream, softened
- 2 (3 ounce) packages instant pistachio pudding mix
- 1 ½ cups milk
- 1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
- ¼ cup chocolate-covered toffee bits (such as Heath®), or to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Combine cracker crumbs and melted butter in a bowl. Mix until evenly moistened; press into the bottom and sides of a 9×13-inch baking dish.
- Bake in preheated oven until crust is lightly browned and smells toasted, about 15 minutes. Remove from the oven and cool.
- Mix ice cream, pudding mix, and milk together in a bowl until combined; spread evenly onto prepared crust. Spread whipped topping over ice cream mixture; top with toffee bits. Place in freezer until hardened, at least 1 hour.

Honestly, it’s a pretty good dessert given it can be made in a cinch with ready-made ingredients. I served this at a family gathering for Father’s Day, and it went over very well. I was initially iffy about using buttery round crackers for the crust, but the saltiness of the crackers compliments the sweet filling and topping. I would make this again.
In all honesty, I made half the recipe – the ice-cream half. And to be doubly truthful, I converted it to sugar free and keto. I used Rebel Keto Vanilla Ice Cream, and Cream instead of milk, and Jello Instant Sugar Free pudding (which is bit higher in carbs than I prefer, but for a birthday, will do). I mixed in pistachios instead of candy and it came out amazing! Tastes like Baskin and Robbins pistachio ice cream, which is great because I’m topping a keto chocolate fudge birthday with it and a scoop of Rebel Keto Triple Chocolate Ice Cream! Someone is going to be very happy!
This is a generational family favorite. When calories are not a concern I use the best ice cream and whole milk. I also make similar with 1/2 Coconut and 1/2 Butterscotch instant pudding using a pre-made pecan crust (adjusting amounts for the smaller size). CocoBut Fluff is my fav desert…
My mom used to make this when we were little! Easy and quick. I poured my filling in 2 ready made shortbread pie crusts!
