Ingredients

  1. 2 cups all-purpose flour
  2. 2 cups white sugar
  3. 1 teaspoon baking soda
  4. 2 large eggs, beaten
  5. 1 (15 ounce) can crushed pineapple, with juice
  6. 1 teaspoon vanilla extract
  7. 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch pan.
  2. Sift together flour, sugar, and baking soda. Stir in eggs, pineapple, and vanilla, mixing until blended. Fold in pecans. Pour batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 35 minutes. Allow to cool.

I have been making this exact recipe for years and it is always a big hit. Family and friends love it. I was a travel nurse and I would make it at least once for every 3 month assignment and was always asked for the recipe. It’s easy to make. It is a dense cake but moist and delicious. The cream cheese frosting is a must on this cake!

I followed the recipe directions as written except my can of pineapples were 20 ounce instead of 15. I guess maybe that was the cause because my cake had no flavor. It was bland tasting even with the cream cheese frosting. I’ve made the Precious Pineapple Cake on here before and it is really good. I guess I’ll stick with that one next time.

This is good but a little on the bland side. I used a 20oz can of pineapple and 1 cup of coconut sugar. Very moist, not too sweet, but quite dense. I will try adding some shredded coconut next time.

This cake is easy and delicious. I did reduce the sugaR to 1 and 1/2 cups. I added pumpkin pie spice to give it more flavor. I used the cream cheese frosting. A family favorite now.

I made this tonight for a dinner party. I did take some of the comments into account and changed a few things. First, I used a 20oz can of crushed pineapple. Also, used 1C of sugar and 1C of brown sugar. I added 1/4 ts of both cinnamon and nutmeg. I beat the eggs first, added the vanilla then the pineapple before mixing into the dry ingredients. I baked for 50 minutes. Used the Cream Cheese Frosting II and sprinkled half with toasted coconut and half in pecan chips (not everyone likes coconut). I left with many compliments and an empty dish.

my kids loved. only did heaping cup of sugar, since used can pineapple in syrup (2 cups was sweet enough). the cake was a bit too moist/soggy for me- better baked as muffins.

It’s very easy to make and tastes very good. It just needs something not sure what but maybe apple pie spice? We frosted it with cool whip and instant vanilla pudding!!

Used brown sugar and added a cup of shredded coconut and a pinch of salt. Big hit! Today I added a can of no sugar added cherry pie filling in addition to the pineapple and it excellent. I think I will cut the sugar (brown only) to 1 1/2 cups when adding the cherries as it was very rich and sweet.

This was a quick and very easy cake to make. I made it as the directions stated, but next time I will cut the sugar in half because it was a little sweet but it was delicious. I also made a cream cheese frosting to go on top which made it even better. Thanks for a great recipe.

I thought this was very easy to make and turned out moist and sweet, even without adding frosting. I would prefer this to be in bundt form, wonder what the cooking time and temperature would be for that?
