Ingredients

  1. One 10-ounce package sharp white Cheddar
  2. 1/2 cup packed, jarred pimentos, finely chopped
  3. 1/4 cup mayonnaise
  4. 1 tablespoon brine, reserved from pimento jar
  5. 1 clove garlic, finely chopped
  6. Kosher salt and freshly ground black pepper
  7. Hot sauce, such as Tobasco
  8. 16 slices toasted whole wheat sandwich bread
  9. 16 slices tomato
  10. 8 leaves red-leaf lettuce

Instructions

  1. Finely grate the cheese and transfer to a food processor. Add the peppers, mayonnaise, brine and garlic. Season with salt, pepper and hot sauce. Pulse until slightly chunky. 
  2. Top half of the bread slices with 2 slices tomato, 1 leaf of lettuce and 1/4 cup of the cheese mixture. Top with the remaining bread. Cut into triangle quarters and serve.
