I developed this dish to entice my finicky eater to try something other than cereal. He devours the chocolate chip cupcakes we dubbed them.

Ingredients

  1. cooking spray
  2. 5 bananas
  3. 1 cup plain yogurt
  4. ¾ cup white sugar
  5. ½ cup butter, at room temperature
  6. ½ cup applesauce
  7. 2 eggs
  8. 2 teaspoons vanilla extract
  9. 3 ½ cups whole wheat flour
  10. 1 tablespoon ground cinnamon
  11. 2 teaspoons baking powder
  12. 2 teaspoons baking soda
  13. 1 teaspoon salt
  14. 1 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 mini muffin tins with cooking spray.
  2. Mix bananas in the bowl of a stand mixer fitted with the paddle attachment until smooth. Blend in yogurt, sugar, butter, applesauce, eggs, and vanilla extract.
  3. Mix whole wheat flour, cinnamon, baking powder, baking soda, and salt together in a large bowl. Pour into banana mixture; stir until moistened. Fold chocolate chips into the batter.
  4. Scoop batter into the prepared muffin tins, filling each cup 2/3 full.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 15 minutes.
  6. You can use sour cream instead of yogurt.
  7. Cooking time really varies depending on how big your muffin cups are and how much you fill them.

Yum! I added 1/2 Tbsp nutmeg and substituted 1 egg with 1 Tbsp ground flax seed and 3 Tbsp water.

This was really good..i halved the recipe and baked it in a loaf pan (banana bread style). I used 1/3 cup of coconut sugar instead of white sugar and added a healthy dose of cinnamon and a bit of nutmeg. Baked the loaf for 55 mins at 350.
