This pimiento cheese has more personality than a traditional recipe! It’s especially good for party platters or potlucks.

Ingredients

  1. 1/2 cup mayonnaise
  2. 2 ounces cream cheese, at room temperature
  3. 8 ounces extra-sharp cheddar cheese, shredded
  4. Kosher salt and freshly ground pepper
  5. 1 jarred piquillo pepper, chopped
  6. 1/4 cup chopped pickled banana peppers
  7. 10 dill pickle slices, chopped
  8. Crackers, for serving

Instructions

  1. Beat the mayonnaise and cream cheese with a stand mixer until combined. Stir in the cheddar by hand until well combined. Taste and season with salt and pepper.
  2. Fold in the piquillo, banana peppers and dill pickles. Taste and adjust the seasoning. Serve with crackers.

Finally found a super pimento cheese recipe! My husband said it’s the best he has ever tasted! I added a little garlic powder and some sour cream, otherwise followed recipe exactly.
