Combination of chicken, spinach, and creamy pesto sauce that is incredibly rich. The finest combination is to serve with crunchy bread and romaine salad.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 cloves garlic, finely chopped
  3. 4 skinless, boneless chicken breast halves – cut into strips
  4. 2 cups fresh spinach leaves
  5. 1 (4.5 ounce) package dry Alfredo sauce mix
  6. 2 tablespoons pesto
  7. 1 (8 ounce) package dry penne pasta
  8. 1 tablespoon grated Romano cheese

Instructions

  1. Heat oil in a large skillet over medium high heat. Add garlic, saute for 1 minute; then add chicken and cook for 7 to 8 minutes on each side. When chicken is close to being cooked through (no longer pink inside), add spinach and saute all together for 3 to 4 minutes.
  2. Meanwhile, prepare Alfredo sauce according to package directions. When finished, stir in 2 tablespoons pesto; set aside.
  3. In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente. Rinse under cold water and drain.
  4. Add chicken/spinach mixture to pasta, then stir in pesto/Alfredo sauce. Mix well, top with cheese and serve.

I couldn’t ask for a more simple yet filling family meal! every time I visit my family they always ask for me to make this meal! I did experiment and tried it with mushrooms and ah the flavor would burst on your taste buds! This is a wonderful recipe for beginner cooks too.

Overall good weeknight family dinner. I would drain most of the juices from the cooked chicken so as not to loosen the alfredo. I used a jarred alfredo sauce instead of the dry mix. I also made a larger batch using a whole box of pasta and 2 chicken breasts sliced thin.

Made this last week for dinner and have had to make it 3 more times since then. My BF works out of town and asked me to make it for him and freeze it so he can enjoy it for dinner. I adjusted the recipe so I could do it in the slow cooker. So was a lot of sauce, I boiled noodles for only half the time and then let them finish cooking in the slow cooker. The absorb the sauce and was delicious.

This was fantastic! I made it as stated. When I reheated it the next day, I added more spinach. Next time I will make the alfredo from scratch, but this is definitely one of the prettiest, yummiest dishes I’ve tried here.

I loved this, but my family thought it was so so. I would recommend fresh parmesan cheese if you don’t’ usually use Ramano. It got a stronger more unusual taste that I think is what caused my kids and husband to not really enjoy it.

I followed the recipe to a T but the chicken was bland so The next time I Mhar it made again I followed the recommendations, had it seared with salt,pepper and chili seasoning. The chicken was moist. As for the spinach, a 5oz tub is perfect with some mushrooms. My kids loved it and they paired with bulgogi.

Quick and easy. I didn’t have Pesto so I just soaked some dry basil and doubled the garlic. Still turned out terrific. I cubed the chicken for cooking because I’m feeding 7 people. A full 16oz of pasta and no problem with it being creamy.

Great recipe! I wouldn’t cook the garlic with the chicken as it would burn at that temp and time. Instead I cooked the chicken in one pan and the garlic, spinach, and sauce in the other. I also added more spinach at the suggestion of others. I gave it four stars because I think it was a tad bland. Next time I will up the garlic and pesto.
