Ingredients

  1. Nonstick cooking spray, for the baking dish
  2. 1/2 cup crushed chocolate sandwich cookies
  3. 4 tablespoons salted butter, melted
  4. 3/4 cup finely chopped pecans
  5. 4 ounces cream cheese, at room temperature
  6. 1/2 cup confectioners’ sugar
  7. Splash of vanilla extract
  8. One 8-ounce container whipped topping
  9. One 5.9-ounce package chocolate instant pudding mix
  10. 1 1/2 cups milk
  11. 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Coat an 8-inch square baking dish with nonstick cooking spray.
  2. Mix together the crushed cookies, melted butter and 1/2 cup of the finely chopped pecans in the prepared baking dish until the ingredients are combined and resemble crumbs. Using your fingers, press the crust to form an even, compact layer. Bake until crisp, 5 to 7 minutes. Set aside to cool.
  3. Using an electric mixer, beat together the cream cheese, confectioners’ sugar and vanilla in a bowl until combined. Fold in half of the whipped topping and place the mixture on top of the cooled crust. Spread evenly.
  4. Next, beat together the chocolate pudding mix and milk in a second bowl until you have a thick mixture. Pour it over the cream cheese layer and spread evenly. Top with the remaining whipped topping and spread evenly again. Sprinkle with the mini chocolate chips and remaining 1/4 cup finely chopped pecans. Chill for 1 hour before serving.

Didn’t have any salted butter so I substituted with olive oil and a dash of salt. Worked great. We also didn’t have Oreos so we doubled the chocolate.

Great recipe! I will definitely make it again. I used a 3.9 ounce box of pudding and sprinkled crushed sandwich cookies on the top instead of mini chips and nuts.

I have been making a version of this recipe called Delta Velvet for over 40 years.  The crust was butter, flour and pecans.  Then a cream cheese, confectioners sugar and non-dairy whipped cream layer, then a vanilla and chocolate pudding layer, then another layer of non dairy  whipped cream and top with chocolate shavings or pecans or whatever.  I could eat this everyday and Ree’s version is just as delicious.
