For your holiday table, this Easter bread makes a lovely centerpiece. Whole eggs are used as decorations on the braided dough; the eggs bake with the bread. Before baking, you can colour the entire egg for more color.

Ingredients

  1. 1 (16 ounce) package penne pasta
  2. 2 tablespoons butter
  3. 2 tablespoons olive oil
  4. 4 skinless, boneless chicken breast halves – cut into thin strips
  5. 2 cloves garlic, minced
  6. salt and pepper to taste
  7. 1 ¼ cups heavy cream
  8. ¼ cup pesto
  9. 3 tablespoons grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Heat butter and olive oil in a large skillet over medium heat. Saute chicken and garlic until chicken is almost cooked. Reduce heat and stir in salt, pepper, cream, pesto and Parmesan cheese. Cook until chicken is no longer pink inside. Stir in cooked pasta.

I added more half and half to make more sauce and thickened it with corn starch. Added cherry tomatoes toward the end and let it all heat up together. Delicious.

This was a real treat: An easy recipe and it is absolutely delicious! Make sure not to over-cook the pasta and be careful with the salt. It’s also a recipe that lends itself to additions like jalapenos, sun-dried tomatoes, more and different cheeses, and spices like cumin, dill, etc.

4 stars for the original version of the recipe. Improved for my family by adding flour to thicken the sauce more and Oregano to add more to the flavor profile. Reheats well.

The sauce was watery. There is nothing in the recipe that would thicken it. It also looks really bland with white chicken and white noodles with cream. I may add more pesto before serving it.

I did a full pound of linguine and 3 medium boneless chicken breasts, thinly sliced. I had some homemade pesto in the freezer from last summer. I sauteed the chicken in 3TBS butter, 2TBS olive oil then added 1 TBS of cornstarch, 1/2 cup heavy cream, 1 cup chicken broth, 2 tsp of chicken bouillion and 2/3 cup of homemade pesto. It was a huge hit. Total comfort food.

Wow this is amazing! I agree with others that it’s too much pasta. I used half the called for amount. I cooked the chicken in 2 Tbsp butter and 1 Tbsp olive oil. I only had 3/4 cups of heavy cream so I used that and then upped the pesto to probably 2/3 cup. I also added 1 tsp cornstarch to thicken. It was absolutely divine!

Great! I did use 1/2 cup of chicken broth and 3/4 cup of heavy cream as I didn’t have enough cream. I didn’t use the entire box of pasta as that would have been too much… I used only half the box. I also added garlic powder and may add some chopped onions next time for extra flavor. Everyone, even my kids, liked this. thanks!

Really good and easy to make. Only tweak is that with 1.25 cups of cream, it’s a little too soupy for my taste. I’ll cut it down by .50 cups next time.
