My husband’s go-to, simple dinner of choice is these fajitas. They taste amazing! Simply leave the meat out at room temperature for 20 to 30 minutes while keeping the bag tightly closed if you don’t have time to marinate it for two or more hours. Serve with lime wedges, sour cream, and Monterey Jack or Cheddar cheese.

Yield: 2 to 2-1/2 dozen cookies

Ingredients

  1. ½ teaspoon baking soda
  2. ½ teaspoon baking powder
  3. ½ teaspoon salt
  4. 1 ¾ cups all-purpose flour
  5. 1 ½ teaspoons instant coffee granules
  6. ½ cup butter, softened
  7. 1 cup packed brown sugar
  8. 3 tablespoons white sugar
  9. 2 eggs
  10. 2 tablespoons milk
  11. 2 teaspoons vanilla extract
  12. ½ cup chopped pecans
  13. 1 ½ cups semisweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine baking soda, baking powder, salt, flour and instant coffee in a mixing bowl.
  3. Cream the butter with the brown and white sugar until fluffy. Beat in eggs, milk and vanilla extract. Gradually add flour mixture to the butter mixture and beat well. Stir in the chopped pecans and chocolate chips; mix well to blend. Drop cookies by tablespoon onto an ungreased cookie sheet.
  4. Bake for 15 minutes or until cookies are golden in color.

If you are looking for a chewy, fat chocolate chip cookie, this is it. Not thin and crispy or cake like – these are perfect. You don’t taste the coffee – probably could leave that out. Thanks for a great recipe.

These weren’t too bad. I had some pecans that I needed to use, so decided that I’d try this recipe. I screwed up and added an extra egg (so added some more flour to try and counterbalance that out), and since I didn’t have any instant coffee, I used some Bailey’s instead. They had a great flavor, but weren’t too different from most other chocolate chip cookies that I’ve had.
