These delightful tiny muffins have only five ingredients, which is difficult to believe. They taste like pecan pie because of the brown sugar.

Ingredients

  1. 1 cup packed light brown sugar
  2. ½ cup all-purpose flour
  3. 1 cup chopped pecans
  4. ⅔ cup butter, softened
  5. 2 eggs, beaten

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 18 mini muffin cups or line with paper muffin liners.
  2. In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl beat the butter and eggs together until smooth, stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full.
  3. Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Cool on wire racks when done.

Oh my word, how did I miss this recipe? These muffins were fantastic. I followed the recipe exactly except I added 1/4 tsp of vanilla (because vanilla makes everything better). I used paper muffin tins in a silicone mini muffin pan and sprayed them with Pam and everything came out just fine. I also filled the tins 100% full which did not spill over the sides so it left a very pretty, golden brown rounded muffin. I was also able to fill 24 of the mini tins completely full with the batter this recipe produced. So pleased with this recipe. Will be a permanent addition to my bag of tricks.

Been making these for years. I dont use the cups and just spray the water tins. I’ve learned not to have my husband deliver them to family or friends. Yeppers they never received them.

Quick, easy and DELICIOUS!! You can’t just stop at one. I’ve made this numerous times but this is the first time I used the mini paper liners and sprayed them with cooking spray before filling (don’t fill more than 2/3) and they pop right out. This is a must have in your recipe box. Everyone asks for the recipe!

This is an easy recipe. I cut down the sugar by just a little bit. I don’t use muffin or parchment paper. Spray the muffin pan and bake. They pop right out when done. Everyone we share these with enjoys them.

I love these little cuties, I made them as per the recipe, but I used 1 double yolk egg and one regular and the tub butter. As for the mini muffin cups, I used the aluminum mini cups, no spray or anything, baked at 350 for about 11-12 mins, PERFECTO!! and they peeled right out the cups, first time trying this recipe too! It is now one of my handy dandy go to’s!!

What a disaster and a waste of ingredients. Didn’t look like muffins to me. Followed exactly used paper liners. Couldn’t get the paper off. Could have been the altitude or not enough flour. Will not make these again

I’ve made these too many times. Huge hit at potlucks. They mix together quicker than it takes to load the mini muffin tins. I do not grease and flour the tins, I just grease them very well with butter. It makes the outside of them a bit chewy and crispy. I live at a higher altitude now and add an extra tablespoon of flour. Don’t over fill the tins, just 3/4 of the way up. They will overflow the cups. If you’re going to use use a muffin cup I’d use foil not paper, these are a bit sticky.

I only had a 12 count metal mini muffin tin so I greased it up REALLY well due to other reviews and they still stuck. I put the remaining batter in my silicone muffin pan and made larger muffins. EXCELLENT!! I did not alter the recipe at all, so very yummy I will definitely make again.

Lord have mercy these are good! After reading many reviews I added 1 tsp vanilla, 1 tsp maple syrup, 1/4 tsp salt and 1/4 tsp cinnamon. Also used 1/2 cup butter as suggested. You could add coconut or dried cranberries or mini chocolate chips. So good, so easy. These are gonna be a problem.

Holy over think it. (don’t) Just follow the recipe and use foil muffin cups. Perfect taste, a bit sticky the first day, more cake like the second day

Pretty good! Does remind me of Pecan Pie. BF said best muffin he’d ever had. I did replace a bit of brown sugar with white. I used a bit more butter. Added vanilla and salt. Made mini muffins and no liners. Just sprayed with non-stick and sprinkled with a bit of sugar. Minimal sticking. Baked 15m @ 350.
