Ingredients

  1. 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  2. 1/2 pound hot Italian sausage, available in bulk at butcher counter or, 2 links, casings removed
  3. 1 pound sweet Italian sausage, available in bulk at butcher counter or, 4 links, casings removed
  4. 3 to 4 cloves garlic, chopped, optional
  5. 1/2 cup chicken or vegetable broth
  6. 1 (28-ounce) can crushed tomatoes
  7. 1/2 cup heavy cream
  8. Salt and freshly ground black pepper
  9. 1 cup frozen green peas
  10. 24 leaves fresh basil, torn or thinly sliced
  11. 1 pound penne rigate pasta, cooked to al dente
  12. Grated Italian cheese, for passing

Instructions

  1. Heat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan. Add sausage meat. Crumble sausage meat as it browns. Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes. Season with salt and pepper. Stir peas and basil into your sauce to combine. Toss hot drained penne rigate in pan with the sauce, then transfer pasta to serving bowl.

Very good ! We loved it very much and stretched it to about 7 – 8 servings with a salad and garlic bread.

I’ve been making this recipe for years. It’s my go to pasta to bring or send to friends and family as it is a sturdy dish and feeds many.

I have been using this recipe for years, my kids love it, their friends love it, so easy and definitely my go to meal when its been a hectic day. The only thing I change is leave out the broth.

Simple and delicious!

One of my go to recipes for several years. Made it this evening & used pesto instead of fresh basil as that is what I had on hand. Delicious!

One of the best and easiest recipes. My family loves it! I crisp up pancetta then cook the sausages in the oil and continue as the recipe states then add the crispy pancetta on top before serving. So good!
