Peanut-Free Chocolate Macaroons

Peanut-free! Frogs and Haystacks is another name for these no-bake chocolate macaroons. Since before I was born, my mother has been creating these, and she taught me how to do it. There are a lot of no-bake cookies available, but I like these. Keep cold and in an airtight container. You can freeze these.

Ingredients

  1. 2 ½ cups rolled oats
  2. ½ cup cocoa powder
  3. ½ cup flaked coconut
  4. 1 ½ cups white sugar
  5. ½ cup milk
  6. ½ cup butter
  7. 1 teaspoon vanilla extract

Instructions

  1. Line a work surface with waxed paper.
  2. Stir oats, cocoa powder, and coconut together in a large bowl.
  3. Whisk sugar, milk, and butter together in a nonstick pot; bring to a boil and cook, stirring constantly, until sugar is completely dissolved, about 2 minutes. Remove from heat and stir vanilla extract into butter mixture.
  4. Stir oat mixture into butter mixture until well-combined. Drop mixture by the spoonful onto waxed paper and let sit until set, at least 15 minutes.
  5. Lay out your waxed paper beforehand; these cookies come together very quickly! You will want to get them portioned out fast before they set-up. I use a 1 tablespoon cookie scoop, and it goes quickly.

This recipe has a lot of potential, but needs some tweaks to the ratios. I had the same issue as other reviewers; the cookies never fully set and remained gooey even after refrigeration.

These are delicious. I’ve made them twice and the first batch set well in the freezer. Second batch is sticky even after freezing. Will try upping the coconut or oatmeal next batch and reducing the sugar.

Yum! My almost 3 year old and I decided to make these today and he got to pour and stir the ingredients. We added a handful of chocolate chips at the end when we were stirring everything together. They melted in nicely. The macaroons look delicious. Definitely making these again.

wonderful piece of nostalgia! I used real butter, and about 1/2c more coconut just because we all love coconut and as result was able to cut back the sugar by 1/2c. They turned out perfect and set up well. so glad to have this recipe back, thanks

Thank you for posting this! I remember making these in the kitchen with my mom when I was young. I make these every Christmas and everyone loves them. I add more coconut and sometimes a tablespoon more coco powder.
