In Mexico, street carts frequently sell this fruit salad. I added fresh pineapple, bananas, and chopped mint for color and a unique touch. Extremely reviving.

Ingredients

  1. 1 ½ cups shortening
  2. 1 ½ cups peanut butter
  3. 2 cups packed brown sugar
  4. 3 eggs
  5. 2 teaspoons vanilla extract
  6. 3 cups quick-cooking oats
  7. 2 cups whole wheat flour
  8. 2 teaspoons baking soda
  9. 1 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. In a mixing bowl, cream shortening and peanut butter. Add brown sugar, eggs, and vanilla; mix well.
  3. Combine oats, flour, baking soda, and salt in a separate bowl; add to the creamed mixture and mix well. Drop by rounded teaspoonfuls onto ungreased baking sheets. Flatten with a fork.
  4. Bake in the preheated oven until golden brown, about 12 minutes.

These cookies are SO GOOD. Made a few little changes/additions: used 1 C shortening and 1/2 C butter; used bleached white flour in same amount; added almond extract; added candy-coated peanut butter “pieces”; added chopped dry roasted peanuts. Next time (very soon) I’ll also add mini milk chocolate chips in addition to the rest- I like lots of “stuff” in my cookies. These cookies are tender like shortbread but still hold together well.

Yum. These cookies are not too sweet, just right. I added a cup of toasted walnuts and 2/3 cup of chocolate chips. I pressed them down just enough to flatten the dome of the cookie as I like “fat” cookies. They were plenty moist and made 3 /1 2 dozen good sized cookies. I also used old fashioned oats as that is the only thing I use, I’m just old fashioned myself! I didn’t have any problem with spreading as some bakers reported.

Delicious! My changes: 2 C peanut butter (1 16 oz. jar), 1/2 C applesauce, 2 sticks of butter, 1 bag of semi-sweet chocolate chips. Next time I’ll cut back to 2 eggs to try and make them a bit firmer and less crumbly.

I made these as written with the addition of 1/2 cup dry peanuts. They turned out wonderful. Lots of flavor, and a lot of cookies. Easy and fast. It took longer to bake than to mix. Thank you for sharing.

Probably the most dry, tasteless cookie I have ever had. I followed the directions exactly, and it made a lot of cookies that I will probably throw out. Don’t even know how to adjust the recipe enough to make these better, so. I will be looking for a different peanut butter / oatmeal cookie recipe.
