Peanut Butter Granola from PAM®

I was looking for a quick and simple meal for a group of picky kids when I created my own extremely easy breakfast sausage loaf using materials that can be found in any fridge. This can be as simple as dinner rolls, sausage, eggs, and cheese, or you can spice it up with some onions and green peppers. This can be prepared the night before, frozen, or quickly prepared.

Ingredients

  1. PAM® Original No-Stick Cooking Spray
  2. ⅓ cup Peter Pan® Creamy Peanut Butter
  3. ⅓ cup Pure Wesson® Canola Oil
  4. ¼ cup honey
  5. 4 cups quick-cooking rolled oats, divided
  6. ½ cup firmly packed brown sugar
  7. ¼ teaspoon salt

Instructions

  1. Preheat oven to 300 degrees F. Spray large baking sheet with cooking spray; set aside.
  2. Combine peanut butter, oil and honey in small saucepan. Heat on low until smooth and pourable. Meanwhile, process 1 cup of oats in blender or food processor until finely ground. Combine ground oats with remaining oats, sugar and salt in large bowl. Pour warm peanut butter mixture over oat mixture and stir well. Pour onto prepared baking sheet.
  3. Bake 30 minutes, stirring every 10 minutes. Let cool 10 minutes, break into chunks and allow to cool completely on baking sheet. Store in airtight container at room temperature for up to 7 days.
  4. This granola tastes great in a Chunky Monkey Parfait. Layer granola with plain Greek yogurt, sliced bananas and a drizzle of honey. Top with Reddi-Wip(R) and a sprinkle of mini chocolate chips for the finishing touch. To enjoy this granola on the go, toss together with dried cranberries, dried apples and pecans for tasty trail mix or with chocolate chips for a cookie-like treat.

Very good & easy to make with ingredients on hand. Added cinnamon to 1 batch & dried cranberries to another. I didn’t get the ‘clumps’ of granola usually seen in store bought-more of a cereal like consistency. Yummy, nonetheless!

This is a simple delicious recipe. Some granola recipes call for multiple ingredients and aren’t worth the extra cost or effort. This is great! I doubled the batch and added dried fruit after it cooled. It’s a keeper recipe.
