Peanut Butter Espresso Brownies

Ingredients

  1. Nonstick vegetable oil spray
  2. 1/3 cup vegetable oil
  3. 1 large egg
  4. 2 tablespoons espresso powder
  5. One 17.6-ounce box brownie mix, such as Duncan Hines
  6. 3/4 cup peanut butter chips
  7. 1/4 teaspoon coarse flake salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Spray an 8-by-8-inch baking pan with nonstick spray. In a large bowl, whisk together 1/3 cup water and the oil, egg and espresso powder. Add the brownie mix and stir until well blended. Stir in the peanut butter chips. Transfer the batter to the prepared baking pan. Sprinkle the salt evenly over the top. Bake until a toothpick inserted into the center of the brownies comes out with a few moist crumbs attached, 35 to 40 minutes. Cool completely before cutting into squares. Arrange the brownies on a platter and serve.

Could people be any more dramatic about Giada using a box mix? She rarely does this sooooo get over it. Anyway I made these this weekend and they were delicious. I considered leaving the espresso out since I didn’t have any, glad I went to buy it. However, mine were not done at 40 mins, not even at 48. The box suggested 55. THANKS FOR THE EASY RECIPE!

These were delicious; crispy on the top and sides while the inside was moist and gooey. A chocolate lover’s dream come true. Normally. I do not like to change a recipe prior to reviewing it; however, in this case, I made a small exception to that rule. I just couldn’t use a box mix, with all of the preservatives and other nasties, it was just unnecessary. So, I used the dry ingredients of one of Ina Garten’s brownie recipes instead. It’s not that I am totally opposed to using boxed mixes on occasion, if needed, but I try not to in most cases. Anyway, it turned out perfectly and my husband could not get enough. 🙂 The espresso enhances the chocolate so much and make it taste even more decadent. Amazing!

What is the song Players gonna play and Haters gonna hate? Yes, this is an out of the box quick fix, but let me tell you, coming from a house that does scratch pancakes on the weekend, and nothing out of the box during the week (my wife is Caribbean), this has been a three time win this week, since seeing on the FN last weekend. From work, to mourning, to kid pleasing, this has been a hit. Giada, thanks, and play on player.

While these brownies tasted just okay (nothing special), they could have been SO MUCH BETTER by making them from scratch instead of using the box mix. It would have made all the difference, and next time, I will go to the extra time to use the butter, sugar, flour and good quality cocoa. I’m quite disappointed in Giada on this one. Either she’s getting lazy or she just doesn’t care. Perhaps both.

I can never understand why so called cooks would use a box mix for baking. These cooks should be teaching novice cooks how to bake/cook the real thing not faux and not using the cheapest ingredients. One does not need the Food Network to see how to bake from a box mix. UGH!

Wow! What an amazing brownie…absolutely LOVED the coffee flavor and, of course, the ease of making them. Sometimes it is great to have a recipe that you can make when time is of the essence…95% of the time I bake from scratch, but even the most seasoned bakers like a quick, simple and delicious recipe from time to time. This recipe is definitely a keeper!!!
