Peach French Toast Bake

Ingredients

  1. Nonstick cooking spray
  2. 1 large whole-wheat baguette (about 8 ounces)
  3. 4 whole eggs
  4. 4 egg whites
  5. 1 cup low fat milk
  6. 1 teaspoon vanilla extract
  7. 5 cups sliced peaches, fresh or frozen
  8. 1/2 lemon, juiced about 1 1/2 tablespoons
  9. 3 tablespoons brown sugar
  10. 1/4 teaspoon ground cinnamon

Instructions

  1. Spray a 9 by 13-inch baking pan with cooking spray. Slice the baguette into 1/2-inch slices and arrange the slices in a single layer in the baking pan. Whisk together the eggs, egg whites, milk and vanilla. Pour the egg mixture over the bread in the pan. In a medium bowl, toss peaches with the lemon juice and 1 tablespoon of the brown sugar. Scatter the peach slices evenly on top of the bread. Combine the remaining brown sugar and cinnamon and sprinkle over the top. Cover and refrigerate overnight.
  2. Preheat the oven to 350 degrees F. Uncover and bake for 40 minutes.

This…is…amazing! Just started a diet and have really been going through Ellie’s recipes. Made it for dinner tonight in individual ramekins. Didn’t put on any brown sugar, but did drizzle a little real maple syrup over it, and a spoonful of vanilla fat-free yogurt. Served with a side of chicken breakfast sausage. Great dinner!

This was one of the stars of our Christmas Brunch this year. It was very easy to make ahead and throw in the oven later. We increased the brown sugar in the peaches but the outcome was fantastic. It was good left over as well warmed in the microwave and drizzled with maple syrup. We will make it again and also I’d like to try it with blueberries or strawberries.

I made this for breakfast this weekend for someone with heart problems. This is one of the few no-salt breakfast items I found with plenty of protein. Instead of canadian bacon, I served with low-sodium turkey bacon. It was delicious! I increased the cinnamon to 1 tsp., and I took the advice of others and mixed the brown sugar and cinnamon into the egg mixture, flipping the bread to coat it. I also baked it for one hour, and it came out beautifully. The whole family loved it!

I love this! Perfect for Christmas morning!!! I love making this when we have company. The house smells amazing when everyone wakes up and it is very filling. Cook up some turkey sausage on the side and you can easily feed 6-8 people. I usually use just a whole wheat loaf of good quality bread and use a carton of No Yolks. I also really like the taste of cinnamon so I put way more cinnamon in mine.

Waste of perfectly good ingredients. There is nothing toasty about this french toast. It is basically soaking wet bread with peaches on top.

Very easy, very tasty and I will make again and again. I’m not sure serves 6 is accurate, I served 4 adults and we ate almost the whole pan.
