Peach and Strawberry Soda

Ingredients

  1. 2 cups water
  2. 1 cup sugar
  3. 1 cup (6 ounces) frozen and thawed peaches (preferably with no sugar added) or 2 fresh peaches, peeled and pitted
  4. 1/4 cup fresh lemon juice (from 1 large lemon)
  5. 1 teaspoon lemon zest (from1/2 large lemon)
  6. 1 cup sparkling water
  7. Ice

Instructions

  1. In a small saucepan, bring the water and sugar to a boil over medium-high heat, stirring constantly, until the sugar has dissolved, 2 to 3 minutes. Set aside to cool for 20 minutes.
  2. In a blender, combine the cooled syrup, peaches, strawberries, lemon juice, and lemon zest. Blend until smooth. Add the sparkling water and pour into an ice-filled pitcher.

I have made this drink several times and everybody loved it, both old and young! Even though this is supposed to be sweet, I would put more lemon juice in it, otherwise it is a little too over-the-top sweet. You can strain this, to get the strawberry seeds out, but a lot of the fruity flavor gets taken out, but it is good either way. Also, if you want this to truely be like a soda, I put the suggested amount in (I use club soda instead of sparkling water, plus a little more after it’s poured into a glass.

We used BLACKBERRIES which required straining but was worth the effort. I reduced the sugar a bit and used this to make ice cream sodas which were out of this world!
