Ingredients
- 3 ½ cups cooked white rice
- ¼ cup chopped dill pickles
- ¼ cup chopped black olives
- 1 tablespoon chopped onion
- ½ teaspoon salt
- 1 teaspoon minced green bell pepper
- ½ cup raisins
- 1 ½ cups tomato juice
- 2 cups cooked salad shrimp
- ¾ cup mayonnaise
Instructions
- Place rice in a medium-size mixing bowl. Mix pickles, olives, onion, salt, green pepper, raisins and tomato juice into the rice. Stir well and let mixture stand 5 minutes.
- Mix shrimp and mayonnaise into the mixture, toss lightly and serve.

This was terrific! Easy to make, tasty.. leftovers keep well in fridge. I added more pickles because I like them and next time think I will bump up all the “stuff” in the recipe. The raisins add a nice sweetness, but I will use dried cranberries next time I think
Sorry, I wasn’t too thrilled with this. It was OK, but I won’t be making it again. It seemed I didn’t like the tomato juice with this combination.
