Ingredients

  1. 1 cup butter
  2. 1 tablespoon extra-virgin olive oil
  3. ¼ pound ground veal
  4. ¼ pound ground beef
  5. ¼ pound ground pork
  6. 2 (19 ounce) cans stewed tomatoes
  7. 1 ½ (6 ounce) cans tomato paste
  8. 1 onion, chopped
  9. ½ pound sliced fresh mushrooms
  10. ½ cup red wine
  11. ½ green bell pepper, chopped
  12. 4 cloves garlic, minced
  13. 1 ½ teaspoons white sugar
  14. ½ teaspoon Worcestershire sauce
  15. ½ teaspoon bitters (such as Angostura®)
  16. 1 pinch cayenne pepper

Instructions

  1. Melt butter with the olive oil in a pot over medium heat. Cook and stir veal, beef, and pork in the butter mixture until completely browned, about 10 minutes.
  2. Stir stewed tomatoes, tomato paste, onion, mushrooms, red wine, bell pepper, garlic, sugar, Worcestershire sauce, bitters, and cayenne pepper into the meat mixture; bring to a simmer, reduce heat to medium-low, and cook at a simmer until the tomatoes break down into a sauce, at least 3 hours.

I love this sauce! Great recipe! I did simmer for 3 hours the first time and it was delicious. I am cooking it today again and it will be more like 5 hours. We’ll see! Worth the effort for sure.
