This Mason jar meal not only helps with mobility but also quantity control, whether you’re packing a picnic or just an office lunch. The finished dish has Three Bridges® Organic Spinach and Cheese Tortellini as well as vibrant vegetables and greens. For up to a week, keep in the fridge. Just give it a good shake and serve when it’s time to eat!

Ingredients

  1. 1 (9 ounce) package spinach and cheese tortellini (such as Three Bridges® Tortellini)
  2. 1 (4 ounce) jar pesto (such as Three Bridges® Pesto)
  3. ¼ cup halved, seeded, and sliced English cucumber
  4. ¼ cup halved cherry tomatoes
  5. ¼ cup matchstick-sized pieces red onion
  6. ½ cup chopped mache (lamb’s lettuce)
  7. 1 canning jar
  8. salt and ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water until they float to the top, 5 to 7 minutes. Drain water. Place in the refrigerator to cool, about 15 minutes.
  2. Layer pesto, cucumbers, tomatoes, onions, tortellini, and mache into the canning jar; season with salt and pepper.
  3. Romaine lettuce can be substituted for the mache.
  4. The tortellini can be made ahead of time.
  5. Ideally the heartier and heavier ingredients are layered on the bottom and the more delicate lighter ingredients are on the top.

All the ingredients are very good for a pasta salad. It tasted great but I had to take everything out of the jar to mix up! Good recipe.
